CRANBERRY SHRUB

Shrubs are vinegar-heavy syrups that cut through the heaviness of traditional syrups with a bite of acidity. They can be made several different ways. The quickest way to make a shrub is listed below.

  • 2 cups vinegar
  • 2 cups fresh cranberries
  • 2 cups sugar

Sanitize a quart-sized mason jar.

Add the fresh cranberries to the mason jar.

Heat the vinegar in a sauce pan to just below boiling (about 190 F), and then pour the vinegar over the fruit. Seal and shake.

Let sit for 24 hours, then strain through cheesecloth until the vinegar is no longer cloudy.

Place the infused vinegar and sugar in a saucepan. Bring to a boil, stirring to dissolve sugar (about 10 minutes). Remove from heat and let cool. Pour into a clean, sanitized jar or bottle.
