THE BRASH, YOUNGER BROTHER OF OUR BOURBON
Using the same 51% corn, 49% wheat mash bill as our Bourbon and Red Eye Whiskeys, the new-make spirit rests for just one week in charred oak barrels. In this time, the barrel aging process begins to shave off the rougher notes of the raw spirit and produces a beautiful straw color.
We landed on the high wheat mash bill early in our development and quickly learned that the new make coming from the still was quite delicious.

Strong grain and heavy sweetness. Pronounced corn with hints of black pepper and freshly baked bread.

Vanilla, quickly followed by black pepper and oak. Rich, long-lasting yeast, brown sugar, and dry cocoa powder.

Forward oak flavors. Grain flavors become more pronounced and there's an easily identifiable sweetness.

We filled used Red Eye Whiskey barrels with our award-winning New Western style gin where it rested for eight months. We kept our gin recipe simple with just eight botanicals: juniper, coriander, bitter orange peel, angelica root, orris root, licorice root, chamomile flower, and a hint of sarsaparilla to tie in our Western roots.

We age our Bourbon new make in various barrels for six to 12 months before blending them to create Red Eye, an approachable 80-proof whiskey that offers depth and nuanced flavors, proving that youth does not detract from drinkability.

We filled our new, charred American White Oak, 53 gallon barrels with new-make whiskey using our 51% corn, 49% wheat mash. While the new-make was created from our own grain in about 14 days, we knew we wouldn't be seeing or tasting this whiskey for a long time.
