We landed on the high wheat mash bill early in our development and quickly learned that the new make coming from the still was quite delicious.
All three whiskeys included use our 51% corn, 49% mash bill. The biggest difference? Their age.
Though just aged one week in charred American oak barrels, the brief rest has shaved off the rougher notes of the White Whiskey and produced a beautiful straw color.
Next in line, the Red Eye Whiskey, aged six to 12 months, is considered an approachable sipping whiskey to the novice drinker, while boasting an impressive depth with nuanced flavors that belie its youth.
The eldest of the siblings is our Bourbon Whiskey, aged at least two years in new American charred oak barrels. Coming in at 90 proof, our Bourbon possesses the ideal balance of flavor and heat.
