DODGE CITY, Kansas — Boot Hill Distillery – Kansas’ only soil-to-sip craft distillery – announced Thursday morning that their White Whiskey will be available in the Boot Hill Distillery Tasting Room starting Friday, November 18.
Boot Hill White Whiskey is made with 51 percent US No. 1 Yellow Dent Corn and 49 percent Hard Red Winter wheat that is planted, grown, harvested, milled, mashed, fermented, distilled, and bottled by Boot Hill Distillery.
The resulting whiskey is then rested in oak barrels for one week to impart a light straw color and hints of vanilla and oak.
“This is essentially our bourbon mash,” said Boot Hill Distillery Owner/CEO/Distiller Hayes Kelman. “However, instead of waiting several years for maturation to complete, we harvest the barrel while the spirit is still raw and powerful. People are really going to enjoy this unique, characterful whiskey.”
By barely aging the White Whiskey, what goes into the bottle has a powerful grain flavor with just a touch of wood.
“All that we’re doing by letting it sit for a week on oak is taking a hint of the edge off of that raw spirit,” said Director of Marketing/Distiller Mark A. Vierthaler. “Think of it like moonshine that’s gone to finishing school.”
The distillery’s tasting room will have special expanded hours on Friday and Saturday from 12 p.m. to 7 p.m. this weekend to give more opportunity to pick up bottles from the historic first White Whiskey bottling.
Tasting Notes
Nose: Strong grain and heavy sweetness. Pronounced corn with hints of black pepper. Heavy yeast.
Neat: Vanilla up front, followed quickly by soft black pepper and oak. Lingering flavors of grain, baking bread and yeast finish.
On the Rocks: Oak flavors move more forward, with the sweetness of the corn and wheat deepening. Grain flavors become more pronounced and easily identifiable. Finishes with a distinctive wheat flavor.
